Polenta, lime and ginger-crusted prawns 17/10/2007 Amanda Laird Your Rating: Ratings: No ratings yet Make a Comment Add to Favourites 0 Serves 4 Print Ingredients 1 cup Polenta 1 Lime, (zest of ) 2 cm Fresh ginger, (peeled) 1 tsp Salt, (to season) 1 Cracked black pepper, (to season) 16 Prawns, (peeled) 1 Olive oil 1 Lime, (for serving) + Add to shopping list Directions In the bowl of a food processor, put the polenta, lime, ginger, salt and pepper and process until combined. Coat the prawns in this mixture, pressing well. Heat 1 Tbs of olive oil in a pan and cook the prawns in batches. When pink on one side, carefully turn using a fish slice and continue cooking - approximately 1-2 minutes on each side. Wipe the pan and add fresh oil for cooking each batch. Drain on paper towels. Serve hot or cold with wedges of fresh lime.
