Fans of coriander will love this simple twist to the standard pesto recipe.

|3 cups||Coriander, (leaves and stalks),|
|½ cup||Pine nuts, or almonds|
|4 cloves||Crushed garlic, (or 1 tbsp from a jar)|
|¼ cup||Extra virgin olive oil|
|½ cup||Parmesan cheese, grated|
|1 to taste||Salt & freshly ground pepper|
|1 to taste||Chilli powder|
- Simply whizz all ingredients together
- Add the chilli slowly at the end to add a lovely “bite” but be careful not to go overboard.
