Pan fried hapuku with vanilla herb salt and artichokes
( SERVES 4 )
|1 to drizzle||Olive oil|
|1 to taste||Vanilla and herb sea salt, (I used Equagold available from gourmet food stores)|
|175 g||Artichokes, (jar in olive oil)|
|1||Lemon, (wedges to serve)|
- Heat a fry pan then add one tablespoon of olive oil. Season each fillet with vanilla salt and pan fry two at a time. Cook for 3 or 4 minutes on each side depending on the thickness of the fish.
- Transfer the fish to serving plates. Add the jar of artichokes to the pan and warm. Serve the artichokes and lemon with the fish.
