Fruit & nut spread
This lovely spread is great for sandwiches or on crackers.
Makes about 1 & 1/4 cups.

|250 g||Cream cheese|
|¼ cup||Raisins, or currants|
|¼ cup||Chopped nuts|
|2 tsp||Crystallised ginger, finely chopped|
|3 tbsp||Orange juice|
- Break up the cream cheese. Soften slightly in the microwave on medium-low (50 per cent) power for about 30 seconds.
- Beat the cream cheese until smooth. Mix in the raisins, nuts and ginger.
- Mix in the orange juice, a little at a time, to create a consistency for spreading.
