Manuka caramelised kumara
( SERVES 8 )
A simple roast kumara dish - the use manuka honey adds a lovely flavour to the caramelisation.

|4||Orange kumara, (peeled and sliced)|
|2||Oranges, (juice and zest of)|
|2 tbsp||Butter, (softened)|
|2 tbsp||Manuka honey|
|1||Salt & freshly ground pepper, (to season)|
- Preheat oven 200 degC.
- Toss kumara with butter, juice, zest, honey and seasoning.
- Roast for 30 minutes, gently turning once.
