Schnitzel and Apple stir fry

|500 g||Pork schnitzel|
|1 tbsp||Fresh ginger, finely grated|
|1 to taste||Freshly ground black pepper|
|2 tbsp||Canola oil|
|1||Apple, large, thinly sliced|
|1||Celery stalk, thinly sliced|
|½ cup||whole kernel corn|
|2 cups||Cabbage, shredded|
- Cut the pork into thin strips. Rub the ginger and pepper into the meat.
- Heat half the oil. Stir-fry the meat for 1-2 minutes in batches in a non-stick frying pan. Place aside.
- In the remaining oil, stir-fry the apple, celery, corn and sultanas for 4-5 minutes, until crisp tender.
- Add the cabbage and stir-fry for 1 minute. Return the pork to the pan and heat through.
