Serves 4

Ingredients

1 tbsp Olive oil
300 g Chorizo sausages, sliced
1 Large onion, chopped
1 clove Crushed garlic
400 g Diced tomatoes, (can)
400 g Canned black beans, (in chilli)
1 cup Corn kernels
1 cup Sour cream

Directions

  1. Heat olive oil in a frying pan.
  2. Cook sausages, onion and garlic until onions are tender.
  3. Add tomatoes, beans, and corn.
  4. Cover and simmer for 10-15 minutes.
  5. Serve topped with sour cream
