Makes 2 cups

Ingredients

8 Tomatoes, chopped
2 Green chillies
5 cloves Garlic
3 Chipotle peppers, canned
½ tbsp Ginger, grated
1 tsp Sugar
1 Lemon, zested and juiced
½ tsp Smoked paprika
1 tbsp Olive oil

Directions

  1. Combine all the ingredients in a food processor and whiz until smooth.
  2. Remove to a saucepan and simmer, stirring frequently, until sauce thickens (20-30 minutes).
  3. Serve hot or cold with corn chips, or as a sauce in cooking.
