Sometimes it’s just a couple of components on what is literally a piece of toast that has so much impact. The new Lindis Pass Brie from Whitestone Cheese of Oamaru has taken the New Zealand soft ripened cheese category to a completely new level. Soft, ripe and gooey, this remarkable cheese, spread on crisp bruschetta with your favourite fruit based chutney or relish to accompany, will have your eyes rolling back in your head with your first mouthful.

Ingredients

1 loaf Sourdough bread, or ciabatta
1 serving Extra virgin olive oil
1 serving Brie, Lindis Pass if available
1 jar Fruit chutney

Directions

  1. Slice some sourdough or ciabatta and brush with extra virgin olive oil.
  2. Grill until crisp around the edges.
  3. Slather Lindis Pass brie on to toast and add a small dollop of some fruit chutney to cut the richness.
  4. Knock yourselves out.
