|1 cup||Brown sugar|
|1 tsp||Baking soda|
|1 tsp||Baking powder|
|2 dessert spoons||Ground ginger|
|½ tsp||Mixed spice|
|½ tsp||Ground nutmeg|
|1 tsp||Ground cinnamon|
|360 g||Golden syrup|
- Grease and line two loaf tins.
- Sieve together the dry ingredients, minus the brown sugar. Add the sugar and mix with a wooden spoon, getting rid of any lumps.
- Melt the golden syrup and butter together in the microwave. Add to the dry ingredients and mix lightly.
- Add in the milk and beaten eggs and continue to mix with the spoon. Once completely combined, finally use a whisk just to smooth out the mixture. Pour into tins. Bake at 150C for about 50 to 60 minutes. Freezes well.
