Falafel burger
| 1 can | Chickpeas |
| 1 can | Lentils |
| ½ | Onion, chopped |
| 3 | Garlic cloves, crushed |
| ½ cup | Coriander leaves |
| ½ cup | Parsley |
| 2 tsp | Ground cumin |
| 1 tsp | Ground coriander |
| ½ tsp | Chilli |
| ½ | Lemon, zest |
| 3 tbsp | Flour |
| ½ tsp | Salt & freshly ground pepper |
| 1 | Cornflour, for dusting the patties |
| 1 to fry | Oil |
| 1 | Turkish bread, pockets, one per burger. |
Salad
| 1 | Cucumber, sliced |
| 1 | Red onion, thinly sliced |
| 1 bunch | Coriander leaves, chopped |
Red pepper aioli
| 2 | Red peppers |
| ½ cup | Natural yoghurt, unsweetened |
| 3 tbsp | Mayonnaise |
| 1 | Garlic cloves, crushed |
| ½ | Lemon, zest and juice |
| 1 to taste | Black pepper - ground |
Directions
Falafel burger
- To make falafel, place chickpeas,lentils (both drained well),onion, ,crushed garlic, parsley and coriander,cumin, ground coriander,chilli, lemon zest , and salt and pepper in a food processor and mix well.
- Rest the mix in the fridge for an hour then form into patties.
- Dust in cornflour and fry well in hot oil.
- Construct burger in toasted Turkish bread pockets with red pepper aioli, falafel patties, a quick salad of cucumber, tomato, red onion and fresh coriander leaves and more red pepper aioli.
Redpepper aioli
- Roast, peel, de seed and finely chop 2 red peppers.
- Mix yoghurt with mayonaise, the chopped redpeppers,garlic, the zest and juice of ½ a lemon, and ground black pepper to taste.
