Chicken & watercress club sandwiches

|1½ cups||Chicken, chopped, cold,poached|
|3 tbsp||Mayonnaise, for the chicken salad|
|1||Lemon, to juice|
|½ tsp||Salt & freshly ground pepper|
|½ loaf||Bread, sandwich|
|1 to taste||Mayonnaise, to "butter" the sandwich bread|
- Make a simple chicken salad with chopped cold poached chicken mixed with mustard, mayonnaise, lemon juice, salt and freshly ground pepper.Combine and chill until required.
- Spread slices of fresh sandwich bread with the chicken salad, top with another slice of bread that has been lightly “buttered” with mayonnaise, top with watercress, then another slice of bread.
- Press down a little, then cut off the crusts and cut into fingers.
