Cajun Hoki Burgers
Ingredients

| 4 | Sourdough Buns |
| ½ | Red cabbage, finely sliced |
| ½ | Green cabbage, finely sliced |
| 1 | Baby carrot, grated |
| ¼ cup | Mayonnaise |
| ½ tsp | Cajun seasoning |
| 1 tbsp | Fresh parsley, chopped |
| 4 | Cajun Hoki fillets, Sealord |
| 2 | Limes, cut into wedges |
| 1 punnet | Cherry tomatoes, halved |
| 4 handfuls | Potato chips/wedges |
Directions
- Cut and toast buns.
- Toss coleslaw with mayonnaise, Cajun seasoning and herbs.
- Cook hoki fillets on baking paper lined trays at 180degC for about 8 minutes each side until golden and cooked through.
- Layer toasted buns with coleslaw and top each with a Cajun fish fillet. Squeeze over fresh lime and serve with baby tomatoes and homemade wedges.
