Red salmon & rocket pasta

Try this salad during the warmer months and enjoy the treat you give your taste buds. Recipe by Nicola Hudson
Ingredients

| 210 g | Sealord red salmon |
| 4 cups | Penne pasta |
| 2 tbsp | Olive oil |
| ½ | Onion, chopped |
| 1 tsp | Garlic, crushed |
| 2 tbsp | Capers |
| ½ cup | Fresh basil |
| 2 cups | Rocket |
| 2 tbsp | Pine nuts |
| 1 to drizzle | Oil, (lemon) |
| 1 | Cracked black pepper, to season |
Directions
- Cook the pasta according to packet instructions. Once cooked, drain thoroughly and put in a large bowl.
- Heat the olive oil in a large frypan over a medium heat. Sauté the onion and garlic in the pan until onions are translucent. Add Salmon and capers to the onion and garlic. Mix lightly and remove from heat.
- Add to pasta and toss to combine. Fold through rocket and basil and then sprinkle pinenuts. Top with cracked pepper and drizzle over lemon oil.
