Red salmon & rocket pasta

Try this salad during the warmer months and enjoy the treat you give your taste buds. Recipe by Nicola Hudson

|210 g||Sealord red salmon|
|4 cups||Penne pasta|
|2 tbsp||Olive oil|
|1 tsp||Garlic, crushed|
|½ cup||Fresh basil|
|2 tbsp||Pine nuts|
|1 to drizzle||Oil, (lemon)|
|1||Cracked black pepper, to season|
- Cook the pasta according to packet instructions. Once cooked, drain thoroughly and put in a large bowl.
- Heat the olive oil in a large frypan over a medium heat. Sauté the onion and garlic in the pan until onions are translucent. Add Salmon and capers to the onion and garlic. Mix lightly and remove from heat.
- Add to pasta and toss to combine. Fold through rocket and basil and then sprinkle pinenuts. Top with cracked pepper and drizzle over lemon oil.
