sealord - Pan-fried Orange Roughy with Tabbouleh Salad

No ordinary salad here! Toasted almonds and fresh tabbouleh make for a mouth watering meal. Recipe by Nicola Hudson

|150 g||Burghul wheat|
|3||Tomatoes, seeded and cubed|
|1||Cucumber, seeded and cubed|
|3 cups||Flat leaf parsley, chopped|
|1 cup||Mint, chopped|
- Pan fry the Orange Roughy until cooked through.
- While the Orange Roughy is cooking, cook the burghul as per packet instructions and mix together with all other tabbouleh ingredients.
- Whisk salad dressing ingredients together and pour over tabbouleh salad.
- Place the Orange Roughy on a plate with toasted almonds sprinkled on top and serve with tabbouleh salad.
