Dried Figs and Mandarins in Honey

|3 tbsp||Runny honey, mild|
|2 tbsp||Extra virgin olive oil|
|2 tbsp||Lemon juice|
|250 g||Dried figs, or figlets|
- Melt the honey in the oil, water and lemon juice in a saucepan, then add the figs.
- Bring to a gentle simmer and cook for about 5 minutes or until the figs have plumped up.
