Spinach Salad with Walnut Pesto Dressing

|3 cups||Spinach leaves|
|1 cup||Basil leaf|
|4 tbsp||Olive oil|
|1 tbsp||Lemon juice|
|½ tsp||Sea salt|
|1 to taste||Black pepper - ground|
- Chop the spinach leaves and stems into bite-sized pieces and place in a large bowl. Note for the nuts you can use walnuts pinenuts or cashews.
- Place the other ingredients in a food processor and pulse for 20-30 seconds until well combined, but with some of the nuts still fairly chunky.
- Add to the spinach and mix by hand, ensuring all the leaves are well-coated.
- Serve immediately.
