French Toast

Here’s a recipe for special-occasion french toast that’s easy enough for children – or even fathers who rarely cook. For the special day, bananas are always a terrific garnish, but why not splash out on exotic fruit like the sweet little Philippines mangos that are available from specialty shops?
Ingredients

| 3 | Eggs |
| 6 tbsp | Cream, or full-cream milk |
| 1 pinch | Salt |
| 4 slices | Brioche |
| 50 g | Butter |
| 1 | Icing sugar |
| 2 | Bananas |
| 1 | Mango |
| 4 tbsp | Plain unsweetened yoghurt |
| 1 to taste | Vanilla syrup |
Directions
- Whisk the eggs, milk or cream and salt until well blended. Strain the mixture through a sieve into a shallow soup plate.
- Dip both sides of each slice of bread (use slightly stale brioche loaf or white bread) into the egg, leaving it there for a few seconds so it soaks up plenty of the mixture.
- Melt the butter in a large frying pan and gently cook the toast, 2 slices at a time, over a low to medium heat until pale golden – about 2-3 minutes each side.
- To serve, sprinkle a little icing sugar over the hot toast, top with carefully sliced fresh fruit, yoghurt and a drizzle of syrup.
