Lime and Chilli 'Jam'

Ingredients

150 ml Water
200 g Palm sugar
1 Red chilli
1 Green chilli
1 Lime

Directions

  1. Bring the water and palm sugar(grated) to the boil and simmer until it has thickened slightly and turned a light caramel colour.
  2. Remove from the heat and leave to cool.
  3. Halve the chillies, then scrape out the seeds using a small knife. Chop the flesh as finely as possible, then add to the palm-sugar syrup.
  4. Grate the zest from the lime, squeeze its juice into the mixture, then stir to combine.
  5. Store in a sealed jar in the refrigerator.
