Potatoes Roasted with Lemon and Olive Oil

Directions

  1. Preheat the oven to 200 degC.
  2. Scrub the potatoes and cut into wedges. Cut the lemons into wedges (small thin-skinned lemons work best). 
  3. Toss the ingredients together in a heavy baking dish until well-coated with oil.
  4. Bake for about an hour until the potatoes are tender and crisp. Serve at once.
