Potatoes Roasted with Lemon and Olive Oil

|0.01||Salt & freshly ground pepper|
- Preheat the oven to 200 degC.
- Scrub the potatoes and cut into wedges. Cut the lemons into wedges (small thin-skinned lemons work best).
- Toss the ingredients together in a heavy baking dish until well-coated with oil.
- Bake for about an hour until the potatoes are tender and crisp. Serve at once.
