Coconut French toast with fried bananas

Serves 4

Ingredients

2 cups Coconut cream
3 Eggs, beaten
2 tsp Vanilla paste
4 tsp Caster sugar, or replace paste and sugar with 6 tsp of vanilla sugar
1 tsp Ground cinnamon
8 slices Bread
2 to serve Bananas, sliced

Directions

  1. Combine the above in a bowl. Dip 2 slices of bread per person into the mix. 
  2. Fry the soaked bread in vegetable oil and butter to colour, hold in a warm oven. 
  3. When you have finished cooking the French Toast, add a bit more butter to the pan, cook off banana slices and dust them with a bit more cinnamon and/or vanilla sugar. 
  4. Drain on paper towels then plate up with the warm coconut French toast. 5 Sprinkle with some icing sugar or, for complete indulgence, drizzle with Heilala Vanilla Syrup.
