Warm red cabbage, goat cheese and walnut salad

Serves 4

Ingredients

100 g Goat's cheese, soft
2 tbsp Chives, finely chopped
2 tbsp Walnut oil
1 tbsp Red onion, very finely sliced
1 tbsp Olive oil
200 g Red cabbage, finely sliced
1 Granny smith apple, quartered and finely sliced
40 g Walnuts, toasted then chopped
1 tbsp Walnut oil
1 tbsp Balsamic vinegar
1 Salt & freshly ground pepper, to season

Directions

  1. Crumble the cheese into a bowl. Add the chives, walnut oil and red onion.
  2. Heat the olive oil in a pan then when hot, add the cabbage, apples and walnuts. Stir for 5 minutes then reduce the heat and add the walnut oil, balsamic and seasoning.
  3. Simmer for two minutes, then add all the ingredients together and serve warm.
