Tomato ginger soup

How simple is this? A good way to use up the last of the tomato crop. You could use canned tomatoes but I think fresh is best in this case.

|450 g||Tomatoes, cut in half horizontally, seeds squeezed out and coarsely chopped|
|1 Ltr||Chicken stock, or use vegetable stock|
|3 tbsp||Fresh ginger, coarsely chopped and peeled|
|2 tbsp||Hoisin sauce, or use black bean sauce|
|2 tsp||Caster sugar|
- Bring the stock to a simmer in a saucepan.
- Add all the other ingredients and simmer for 2 more minutes.
- Spike this with a little chopped red chilli if you like things hot.
- Serve with a squeeze of lemon to sharpen the taste.
