Corn, mussel and chilli fritters

Directions

  1. Combine the corn, mussel meat, flour, seasoning and chilli in a bowl.
  2. Make a well in the centre and add the lightly whisked egg yolk with the parsley and butter.
  3. Pour in the milk and gently mix. Whisk the egg white then fold into the mixture.
  4. Heat a fry pan and lightly oil then add spoonfuls and fry until golden. Turn over and repeat.
