Pineapple grilled with vanilla and lime, frozen buffalo yoghurt

Serves 4

Ingredients

1 Pineapple
1 tbsp Butter
2 tsp Vanilla extract, with seeds
2 Limes
4 Yoghurt, scoops of frozen buffalo

Directions

  1. Heat a grill pan. Trim the skin off the pineapple.
  2. Slice the pineapple. Heat the butter until bubbling, add vanilla, then the pineapple. Cook for 3 minutes or until golden then turn over and repeat.
  3. Zest the limes and add to the pineapple with the juice.
  4. Serve with a scoop of frozen yoghurt.
