Melon with ginger ice
A very simple dessert that marries up the sweetness of melons and the zinginess of ginger.

- Make a light sugar syrup with a cup of grated palm sugar, 3 cups of water and 2 tbsp of grated fresh ginger.
- Boil together and reduce by a third. Strain out the ginger and cool the liquid. Freeze in a shallow tray.
- Prepare a melon by cutting it into portion sizes, dicing it to the skin and putting it in a bowl.
- Break up the frozen ginger ice with a fork and pile over the melon. Serve immediately. Very refreshing.
