Shrimp po' boy

|1 to taste||Salt & freshly ground pepper|
|1 splash||Vegetable oil|
- Put the flour into a bowl and season. In a second bowl, whisk the milk and egg. Pour the cornmeal into a third. Toss the prawns into the flour, then into the milk and egg mixture and finally the cornmeal.
- Heat a frypan and cover the base with oil. Cook the prawns over a medium high heat for 30 seconds on each side, depending on size. Transfer to paper towels.
- Cut the French bread into 4 and spread with mayonnaise. Add lettuce and tomatoes then the hot prawns and a squeeze of lemon.
