Directions

  1. Pre-heat oven to 175C. Line a roasting dish with foil and spray heavily with oil In a mixing bowl, mix all ingredients (except oil) and marinate for 30 minutes
  2. Place the chicken in the roasting dish with oil, cover with foil and bake for 30-40 minutes.
  3. Remove the foil and brown until golden under the grill.
  4. Serve with banana, coconut and coriander salad.
