Smoked cheddar and ham squares

|1 sheet||Puff pastry, thawed|
|2 tbsp||Fig paste|
|70 g||Shaved ham|
|½ cup||Cheddar cheese, grated|
|1 tbsp||Lemon thyme|
|1 to drizzle||Olive oil|
|1||Salt & freshly ground pepper|
- Preheat oven to 200C. Score the pastry into 25 x 5cm squares.
- Press a 4.5cm round cookie cutter into each square, without cutting all the way through the pastry, to create a border. Spoon some fig paste into the centre of each round and top with ham, cheese, shallots and thyme. Drizzle with oil and sprinkle with salt and pepper.
- Bake for 10-15 minutes or until puffed and golden.
TIP If fig paste is unavailable, you could also use quince paste for this recipe.
