Ingredients

½ Rock melon
1 slice Prosciutto
100 g Sundried tomato feta

Directions

  1. Remove seeds and skin from melon. Cut flesh into 3cm pieces. Place feta in a bowl and mash roughly.
  2. Cut prosciutto slices in half, lengthways. Spread one tablespoon of feta over each 6 x 24cm prosciutto or ham slice.
  3. Place a piece of rock melon in the middle and wrap ends of prosciutto around melon. Secure with a toothpick if necessary.
