Coconut lime rice pudding with coconut topping
Note: Inspired by Grandma's Rice Pudding.
|½ cup||Basmati rice|
|¼ cup||Lime juice|
|800 ml||Coconut cream|
|½ cup||Lime marmalade|
|½ cup||Desiccated coconut|
|2 tbsp||Brown sugar|
- Scatter rice over the base of a three cup-capacity ovenproof dish. Mix lime juice, sugar and coconut cream together. Pour over rice. Bake at 160 degrees C for one hour or until rice is cooked. Serve sprinkled with coconut topping and drizzle with warmed lime marmalade.
- To make the coconut topping, mix coconut, two tablespoons lime rind and brown sugar together.
