Coconut lime rice pudding with coconut topping

Serves 4

Note: Inspired by Grandma's Rice Pudding.

Ingredients

½ cup Basmati rice
¼ cup Lime juice
¼ cup Sugar
800 ml Coconut cream
½ cup Lime marmalade

Coconut topping

½ cup Desiccated coconut
1 Lime
2 tbsp Brown sugar

Directions

  1. Scatter rice over the base of a three cup-capacity ovenproof dish. Mix lime juice, sugar and coconut cream together. Pour over rice. Bake at 160 degrees C for one hour or until rice is cooked. Serve sprinkled with coconut topping and drizzle with warmed lime marmalade.
  2. To make the coconut topping, mix coconut, two tablespoons lime rind and brown sugar together.
