Fish with mint, melon and basil salsa

Serves 4

Ingredients

½ Rock melon, or green prince melon
1 Red onion
¼ cup Fresh mint, chopped
¼ cup Fresh basil
1 Red chilli
4 Fish fillets, skinned and boned

Directions

  1. Remove seeds from melon. Peel skin and chop melon into small cubes. Peel onion and chop finely. Place melon, onion, mint and basil in a bowl.
  2. Cut chilli in half and remove seeds. Chop chilli finely. Mix into melon mixture. Barbecue or grill fish until cooked. Serve with salsa.
