Try this easy summer fruits salad, livened up with a fresh mint dressing.
Ingredients
½
Rock melon
1 punnet
Blueberries
1 punnet
Raspberries
1 punnet
Blackberries
1 cup
Sugar
1 cup
Water
1 cup
Fresh mint
Directions
Cut melon in half and remove seeds. Peel melon and cut into 2cm pieces. Place in a serving bowl. Gently mix through blueberries, raspberries and blackberries. Pour over mint syrup and chill for one hour.
Mint Syrup: Place sugar, water and mint leaves in a small saucepan. Bring to the boil. Reduce heat and simmer, stirring often, until sugar dissolves. Cool. Strain liquid and refrigerate until cold.
