Roasted fruits and frozen vanilla yoghurt

Roasted fruits
| 3 | Peaches |
| 3 | Plums |
| 5 | Apricots |
| 1 tsp | Sugar |
| 2 tbsp | Water |
Frozen vanilla yoghurt
| 1 Ltr | Vanilla yoghurt |
| 2 tsp | Vanilla essence/extract |
Directions
To prepare Roasted fruits:
- Wash peaches, plums and apricots. Cut fruit in half and remove stones. Mix sugar and hot water together to create a syrup. Brush syrup over the cut surfaces of the fruit.
- Place fruit cut side up in a roasting dish. Grill for five to 10 minutes or until golden brown. Serve with frozen vanilla yoghurt.
To prepare Frozen vanilla yoghurt:
- Mix vanilla yoghurt and essence together. Freeze in a suitable freezer container. Break up and place in a food processor. Process to a smooth consistency and refreeze.
