Quick chocolate raspberry parfaits
( SERVES 4 )
Use bought muffins or make your own.

|2 tbsp||Cocoa powder|
|¼ cup||Water, hot|
|600 ml||Custard, ready made packet|
|500 g||Frozen raspberries, thawed|
- Crumble muffins and divide among four 1.5 cup-capacity dishes.
- Mix cocoa, sugar and water together and combine well.
- Stir into custard. Mash raspberries and divide over muffin crumbs.
- Pour custard over raspberries. Refrigerate for 30 minutes. Serve with ice-cream.
