Haloumi cheese with oven-roasted vegetables

Haloumi cheese can be found in the chiller sections of most supermarkets. 1 orange pepper 1 red pepper 1 yellow pepper 1 carrot 1 large orange kumara 2 tablespoons olive oil 1 teaspoon garlic salt 2 x

Ingredients

3 Pepper
1 Carrot
1 Kumara
2 tbsp Olive oil
1 tsp Garlic salt
360 g Haloumi cheese
½ cup Relish

Directions

  1. Cut peppers in half, remove seeds and cut into quarters. Peel carrot.  
  2. Cut in half and then into 4cm lengths. Peel kumara and cut into 4cm lengths. Place peppers(red, yellow,orange), carrot and kumara (orange) into a baking dish. Brush with oil and sprinkle with garlic salt.
  3. Bake at 200 degrees C for 20 to 25 minutes, tossing often during cooking.
  4. Cut cheese into long strips. Grill, turning often, until golden. Place roast vegetables on a serving platter and garnish with cheese slices. Serve with red pepper relish.
