Haloumi cheese with oven-roasted vegetables
Haloumi cheese can be found in the chiller sections of most supermarkets. 1 orange pepper 1 red pepper 1 yellow pepper 1 carrot 1 large orange kumara 2 tablespoons olive oil 1 teaspoon garlic salt 2 x

|360 g||Haloumi cheese|
- Cut peppers in half, remove seeds and cut into quarters. Peel carrot.
- Cut in half and then into 4cm lengths. Peel kumara and cut into 4cm lengths. Place peppers(red, yellow,orange), carrot and kumara (orange) into a baking dish. Brush with oil and sprinkle with garlic salt.
- Bake at 200 degrees C for 20 to 25 minutes, tossing often during cooking.
- Cut cheese into long strips. Grill, turning often, until golden. Place roast vegetables on a serving platter and garnish with cheese slices. Serve with red pepper relish.
