These puffs are cooked like a soufflé and are delicious with lashings of whipped cream.

- Place apple sauce in a bowl. Separate eggs. Place egg yolks and custard powder in bowl with apple sauce and stir to combine.
- Beat egg whites until stiff peaks form. Slowly add sugar, beating until meringue is thick and glossy.
- Fold meringue and apple mixture together. Spoon into three, one cup-capacity ramekins.
- Bake at 200 degrees C for 15 to 20 minutes or until puffed and golden. Remove from oven and sprinkle with icing sugar. Serve immediately.
Notes: These puffs are like a cooked soufflé so they drop soon after coming from the oven.
