Wasabi, rice vinegar and mirin - a rice wine - can be found in large supermarkets and give a unique, clean, punchy flavour to this great lunch option. Make in 20 mins, serves 4

Ingredients

500 g Brown rice
500 g Brown rice
170 g Tuna in lemon and pepper
1 Lemon
1 tbsp Fresh dill
½ cup Snow peas
2 tbsp Spring onions
½ cup Celery stalk
50 g Pickled ginger

DRESSING

1 tbsp Mayonnaise
1 Lemon
1 tsp Wasabi paste
1 tsp Rice vinegar
1 tsp Mirin
1 to taste Salt & freshly ground pepper

Directions

  1. Cook  brown rice and then drain. Place the rice and the next seven ingredients (drained lemon pepper tuna, Zest of one lemon, chopped fresh dill, chopped snow pea shoots, chopped spring onion, finely diced celery, sliced pickled ginger) in a bowl.
  2. Gently combine.
  3. Mix all the dressing ingredients (mayonnaise, juice of one lemon, wasabi, rice vinegar, mirin, salt and pepper) and drizzle over rice mix. Stir through gently.
  4. Season and serve.
