Roasted pineapple and green tea granita
|½ cup||Dark cane sugar|
Green tea granita
|2 bags||Zesty Green Tea Bags|
|2 drops||Green food colouring|
To prepare Roasted pineapple:
- Cut outer skin from pineapple and cut pineapple into thick rings. Coat slices with sugar and place on a baking paper lined tray.
- Sprinkle over rum. Bake at 200 degrees C until golden and sugar is bubbling. Serve with green tea granita.
To prepare Green tea granita:
- Place green tea bags in a large heatproof jug. Pour over boiling water and stir in sugar. Cool. Remove tea bags and stir in green food colouring.
- Pour into a container suitable for freezing. Freeze until just frozen. Break up and re-freeze. Remove 10 to 15 minutes before ready to serve and scrape into shaved ice.
