Roasted pineapple

1 Pineapple
½ cup Dark cane sugar
2 tbsp Rum

Green tea granita

2 bags Zesty Green Tea Bags
4 cups Water
½ cup Sugar
2 drops Green food colouring

Directions

To prepare Roasted pineapple:

  1. Cut outer skin from pineapple and cut pineapple into thick rings. Coat slices with sugar and place on a baking paper lined tray.
  2. Sprinkle over rum. Bake at 200 degrees C until golden and sugar is bubbling. Serve with green tea granita.

To prepare Green tea granita:

  1. Place green tea bags in a large heatproof jug. Pour over boiling water and stir in sugar. Cool. Remove tea bags and stir in green food colouring.
  2. Pour into a container suitable for freezing. Freeze until just frozen. Break up and re-freeze. Remove 10 to 15 minutes before ready to serve and scrape into shaved ice.
