Green bean and tomato salad with herb dressing

Herb Dressing

Directions

  1. Wash beans. Trim ends and cook in boiling, salted water for five minutes. Drain and refresh under cold water. Wash tomatoes and chop roughly. Place beans and tomatoes in a bowl and toss with herb dressing.
  2. Cut (cheese flavoured) English muffins in half. Toast each half. Divide salad among muffin halves. Shave Parmesan cheese with a vegetable peeler and place over beans and tomato salad.
  3. To make the herb dressing: Chop parsley finely. Crush garlic, then peel and chop finely. Mix parsley, garlic, 1 tsp lemon rind, 2 tbsp lemon juice, oil, salt and pepper together.
