Green bean and tomato salad with herb dressing

Ingredients

| 250 g | Green beans |
| 6 | Tomatoes |
| 2 | English muffins |
| 50 g | Parmesan cheese |
Herb Dressing
| ½ cup | Fresh parsley |
| 2 | Garlic cloves |
| 1 | Lemon |
| ¼ cup | Avocado oil |
| 1 to taste | Salt & freshly ground pepper |
Directions
- Wash beans. Trim ends and cook in boiling, salted water for five minutes. Drain and refresh under cold water. Wash tomatoes and chop roughly. Place beans and tomatoes in a bowl and toss with herb dressing.
- Cut (cheese flavoured) English muffins in half. Toast each half. Divide salad among muffin halves. Shave Parmesan cheese with a vegetable peeler and place over beans and tomato salad.
- To make the herb dressing: Chop parsley finely. Crush garlic, then peel and chop finely. Mix parsley, garlic, 1 tsp lemon rind, 2 tbsp lemon juice, oil, salt and pepper together.
