Asian Duck Omelette

| 160 g | Asian barbecue duck |
| 2 | Spring onions |
| 6 | Snow peas |
| 220 g | Udon noodles |
| 5 | Eggs |
| 3 tbsp | Water |
| 1 tsp | Salt |
| 1 to taste | Black pepper - ground |
| 2 tsp | Char sui sauce |
Directions
- Slice duck finely, discarding any bones. Wash spring onions and slice finely. Wash snow peas and slice in half lengthways.
- Cook udon noodles in boiling, salted water for two minutes. Lightly beat eggs, water, salt and pepper together. Heat a nonstick frying pan. Pour in egg mixture, swirling around to coat sides and base.
- Cook egg until almost set in the middle. Place duck, spring onion, snow peas and noodles on one side of omelette.
- Drizzle with char sui sauce. Cover with remaining omelette and shake on to a serving dish. Cut in half.
Notes: You can buy cooked ducks from most Asian supermarkets.
