Asian Duck Omelette

Directions

  1. Slice duck finely, discarding any bones. Wash spring onions and slice finely. Wash snow peas and slice in half lengthways.
  2. Cook udon noodles in boiling, salted water for two minutes. Lightly beat eggs, water, salt and pepper together. Heat a nonstick frying pan. Pour in egg mixture, swirling around to coat sides and base.
  3. Cook egg until almost set in the middle. Place duck, spring onion, snow peas and noodles on one side of omelette.
  4. Drizzle with char sui sauce. Cover with remaining omelette and shake on to a serving dish. Cut in half.

Notes: You can buy cooked ducks from most Asian supermarkets.
