|1 tsp||Smoked paprika|
|½ tsp||Iodised salt|
|½ cup||Fresh parsley|
|½ cup||Olive oil|
|¼ cup||Red wine vinegar|
- Cook pasta according to packet directions. Drain. Wash peppers and cut in half.
- Discard seeds and slice peppers finely. Wash tomatoes and chop roughly. Slice sausages finely.
- Mix orzo, peppers, tomatoes, sausages and olives together with dressing.
To prepare the dressing:
- Peel shallot and place in the bowl of a food processor with paprika, sugar, salt, parsley, oil and vinegar. Process to combine well.
