Directions

  1. Cook pasta according to packet directions. Drain. Wash peppers and cut in half.
  2. Discard seeds and slice peppers finely. Wash tomatoes and chop roughly. Slice sausages finely.
  3. Mix orzo, peppers, tomatoes, sausages and olives together with dressing.

To prepare the dressing:

  1. Peel shallot and place in the bowl of a food processor with paprika, sugar, salt, parsley, oil and vinegar. Process to combine well.
