Prawns and mango

32 Raw prawns
1 cup Avocado and lime oil
2 Mangoes

Honey lime dressing

1 cup Honey
1 cup Lime juice
3 tsp Fish sauce
2 tbsp Fresh mint

Directions

To prepare Prawns and Mango:

  1. Place prawns in a non-metallic bowl. Toss with lime and avocado oil. Cover and refrigerate for 30 minutes. Peel mangos and cut flesh away from stone in large pieces.
  2. Cook prawns and mango on a hot barbecue until prawns are cooked through. Transfer to a serving dish and drizzle over honey lime dressing.

To prepare Honey Lime Dressing:

  1. Mix honey, lime juice and fish sauce together with chopped mint.
