Prawns and mango with honey lime dressing
Prawns and mango
|1 cup||Avocado and lime oil|
Honey lime dressing
|1 cup||Lime juice|
|3 tsp||Fish sauce|
|2 tbsp||Fresh mint|
To prepare Prawns and Mango:
- Place prawns in a non-metallic bowl. Toss with lime and avocado oil. Cover and refrigerate for 30 minutes. Peel mangos and cut flesh away from stone in large pieces.
- Cook prawns and mango on a hot barbecue until prawns are cooked through. Transfer to a serving dish and drizzle over honey lime dressing.
To prepare Honey Lime Dressing:
- Mix honey, lime juice and fish sauce together with chopped mint.
