Barbecue Chicken with Nectarine Sauce
Enjoy this chicken dish cooked on the barbecue, or if it's raining outside, it's equally good done in the oven.
|1 tsp||Manuka honey|
|1 tsp||Dijon mustard|
|½ cup||White wine|
|½ cup||Chicken stock|
|½ tsp||Iodised salt|
|1 to taste||Black pepper - ground|
- Peel shallots and slice finely. Heat butter in a small saucepan. Add shallots and cook for 1 to 2 minutes or until soft.
- Add honey and mustard. Cut nectarines in half. Remove stones and chop flesh roughly.
- Add to mustard mixture with wine and chicken stock. Simmer until nectarines are very soft and sauce has thickened.
- Add salt and pepper. Barbecue chicken(skinned) until cooked. Serve with Nectarine Sauce and fresh greens.
