Use this curry powder mix as a guide to making your own blend, adding or subtracting spices depending on your personal taste preference. This blend makes a medium-hot curry powder.

Directions

  1. Place cumin, fenugreek and mustard seeds in a small electric grinder with peppercorns, coriander and poppy seeds, ginger, chilli and turmeric.
  2. Grind until smooth.
  3. Alternatively, pound to a fine consistency in a mortar using a pestle.
  4. Store in an airtight container for up to three months.
