Baked Pears Filled with Chocolate and Amaretti

The combination of almond biscuits, chocolate and pear is dessert heaven!
Ingredients
| 4 | Pears |
| 1 | Olive oil |
| 1 | Egg |
| 1 tbsp | Honey |
| 6 | Amaretti biscuits |
| 60 g | Dark chocolate |
| 2 tbsp | Raisins |
| 1 tbsp | Cocoa powder |
| 1 tbsp | Caster sugar |
Directions
- Heat oven to 180 degC. Remove cores from pear halves. Lightly coat pear halves with oil and place in an oven pan.
- Combine egg yolk with honey in a bowl. Stir in amaretti biscuits, chocolate(coarsely crushed), raisins, cocoa and sugar. Divide mixture between pear halves to fill the holes where cores have been removed.
- Bake for 20 to 30 minutes or until pears are tender and golden brown. Dust with icing sugar and serve while still warm.
Tip: Amaretti biscuits are an Italian speciality biscuit, similar to macaroons but with a bitter almond flavour. Look for packets of amaretti biscuits in supermarkets and delis.
