Baked Pears Filled with Chocolate and Amaretti

The combination of almond biscuits, chocolate and pear is dessert heaven!

Ingredients

4 Pears
1 Olive oil
1 Egg
1 tbsp Honey
6 Amaretti biscuits
60 g Dark chocolate
2 tbsp Raisins
1 tbsp Cocoa powder
1 tbsp Caster sugar

Directions

  1. Heat oven to 180 degC. Remove cores from pear halves. Lightly coat pear halves with oil and place in an oven pan.
  2. Combine egg yolk with honey in a bowl. Stir in amaretti biscuits, chocolate(coarsely crushed), raisins, cocoa and sugar. Divide mixture between pear halves to fill the holes where cores have been removed.
  3. Bake for 20 to 30 minutes or until pears are tender and golden brown. Dust with icing sugar and serve while still warm.

Tip: Amaretti biscuits are an Italian speciality biscuit, similar to macaroons but with a bitter almond flavour. Look for packets of amaretti biscuits in supermarkets and delis.
