All-In-One Penne Bolognese

Nothing could be simpler than this quick and tasty bolognese created in one pot using pantry ingredients.
Ingredients
| 1 tsp | Olive oil |
| 1 tsp | Onions, peeled and diced |
| 1 | Carrot, peeled and finely diced |
| 1 piece | Celery, finely diced |
| 500 g | Beef, or Lamb |
| 400 g | Tomatoes, Canned and chopped |
| 410 g | Tomato puree |
| 2 cups | Chicken stock, or water |
| 1½ cups | Penne pasta |
| ¼ to taste | Salt |
| ¼ tsp | Pepper, Fresh ground |
| 3 garnish | Basil |
Directions
- Heat a saucepan over a medium heat, add oil, onion, carrot and celery and cook for 5 to 10 minutes, until softened but not coloured. Add mince and stir-fry for 5 to 7 minutes to lightly brown, breaking up mince as it cooks.
- Stir in chopped tomatoes, tomato purée and stock or water, and bring to the boil. Add pasta and simmer for 15 minutes, until pasta is cooked and sauce has thickened, stirring regularly to prevent pasta sticking together.
- Season with salt and pepper to taste. Serve garnished with fresh basil leaves, if desired.
