Ingredients

1 cup Flour
50 g Butter
50 g Caster sugar
1 tbsp Baking powder
75 g Currants
1 Egg
2 tsp Vanilla essence/extract
2½ tbsp Milk
3 tbsp Raw sugar

Directions

  1. Heat oven to 200°C. Line a baking tray with nonstick baking paper.
  2. Place flour and cubed butter in a bowl. Rub butter into flour with your fingertips until mixture resembles fine breadcrumbs. Stir in sugar, baking powder and currants.
  3. Make a well in the centre of the dry ingredients. Add beaten egg, vanilla and milk to the well, then mix briefly to form a stiff dough.
  4. Form spoonfuls of mix into small rock-like shapes on prepared oven tray. Sprinkle tops of rock cakes with a little raw sugar and bake for 10 to 15 minutes or until golden brown. Transfer to a wire rack to cool.
