White chocolate chip cookies

Ingredients

100 g Butter
¼ cup Caster sugar
1 tsp Vanilla essence/extract
3 tbsp Condensed milk
1 cup Flour
½ tsp Baking powder
½ cup White chocolate

Directions

  1. Heat oven to 170 deg C fan bake. Line an oven tray with nonstick baking paper.
  2. Combine butter (softened), sugar, vanilla and condensed milk in a bowl and beat well with an electric mixer, until pale and creamy. Stir in the flour and baking powder, then stir in white chocolate bits.
  3. Roll heaped tablespoons of the mixture into even-sized balls and place on prepared baking tray. Press with a fork to flatten. Bake for 15 minutes or until golden brown. Transfer to a wire rack to cool. Store in an airtight container.

Tip: For a quick pudding idea, sandwich these cookies together with ice cream (I used hokey pokey) and serve as an ice-cream slice.
