Sticky date and honey slice
|1 tsp||Baking soda|
|1 tsp||Vanilla essence/extract|
|1¾ cups||Self raising flour|
|1 to serve||Yoghurt|
|1 to serve||Honey|
- Place water and chopped pitted dates in a saucepan and bring to the boil. Remove from heat, stir in baking soda and set aside to cool.
- Heat oven to 170 deg C. Line a 17cm x27cm slice tin with nonstick baking paper leaving an overhang on all sides.
- Place softened butter and liquid honey in a bowl and beat until pale and creamy. Beat in vanilla and eggs, one at a time. Then gradually stir in flour, alternating with cold date mixture.
- Spread mixture in prepared tin and bake for 25 to 30 minutes or until a skewer inserted comes out clean but moist. Slice and serve with yoghurt drizzled with extra honey.
