Sticky date and honey slice

Ingredients

1 cup Water
2 cups Dates
1 tsp Baking soda
90 g Butter
¾ cup Honey
1 tsp Vanilla essence/extract
3 Eggs
1¾ cups Self raising flour
1 to serve Yoghurt
1 to serve Honey

Directions

  1. Place water and chopped pitted dates in a saucepan and bring to the boil. Remove from heat, stir in baking soda and set aside to cool.
  2. Heat oven to 170 deg C. Line a 17cm x27cm slice tin with nonstick baking paper leaving an overhang on all sides.
  3. Place softened butter and liquid honey in a bowl and beat until pale and creamy. Beat in vanilla and eggs, one at a time. Then gradually stir in flour, alternating with cold date mixture.
  4. Spread mixture in prepared tin and bake for 25 to 30 minutes or until a skewer inserted comes out clean but moist. Slice and serve with yoghurt drizzled with extra honey.
